Fried chicken recipe
Ingredients
350ml (12fl oz) buttermilk
1.25 – 1.5kd (2 ½ - 3 lb) chicken, cut into 8 serving pieces
125g (4 oz) plain flour
1 ½ tsp salt
1 tsp paprika
½ tsp black pepper
½ tsp garlic granules
large pinch of prated nutmeg
sunflower oil for deep frying
Method
Pour the buttermilk into a large non metallic bowl. Add the chicken and turn to coat. Cover and chill, turning occasionally, for 2-3 hours.
In a large bowl, combine the flour with the salt, paprika, pepper, garlic granules, and nutmeg.
Lift the chicken pieces out of the buttermilk and shake off any excess liquid. Coat with the seasoned flour.
Pour 2 cm (3/4 in) of oil into a deep frying pan and heat to 180°C (350°F). Fry the chicken pieces in the hot oil, in 2-3 batches, turning them several times so they cook evenly for 10-15 minutes until golden brown. Drain the chicken on paper towels. Serve the chicken pieces at once, garnished with parsley.
